Eclair Cake:
Cold, Decadent, and Delicious. Great treat for the summer holidays! And best part of all it is low fat, low sugars, and low calorie.... need I say more? In a large bowl, combine three sugar free vanilla pudding mixes, whisk in 3 3/4 cups milk ( I use sugar free almond milk, it makes it super creamy and low lactose). In the same bowl, pop in three lite cool whips. whisk together. Filling is done. In a seprate bowl, scoop out about a quarter of the filling for the top layer. In this bowl, scoop out 2-3 spoonfuls of Chocolate frosting and whisk in. Set this aside. In a 13x9, make one single layer of gram crackers. Cover the layer with your vanilla filling. Repeat two more times for the next layers (or you could make more layers if you prefer!). The last layer, spread your chocolate filling. On the top sprinkle with dark chocolate chips. Refrigerate and enjoy! |
